The Lexington Central Food Source Center, operated by FoodChain Lex, is set to launch a Nori fresh food kiosk this fall, providing round-the-clock access to hot meals and fresh food options in a local food desert, according to a Spectrum News 1 report. This initiative aims to expand food accessibility for families in Lexington, building on FoodChain Lex's mission to connect the community with fresh food.

The kiosk, a collaboration with the Louisville-based Nori Project, will offer a variety of cold meals that can be heated on demand within the machine after purchase, and will accept SNAP benefits. This Japanese-inspired vending technology is designed to address the challenges of food deserts by making nutritious options readily available at any time.

"Access and education go hand in hand," Kristin Hughes, co-executive director for FoodChain Lex, told the news outlet. "And when we think about changes in the food system, you cannot have changes if you're only providing access or if you're only providing education. They have to go hand in hand."

FoodChain Lex has provided over 1.3 million meals since 2011 through various programs, including free hot meals and their Nourish Lex delivery service. In addition to the Nori kiosk, the organization plans to open a fully functioning grocery store on-site in 2026, further solidifying its commitment to sustainable food systems and community well-being.
