Osma, a Fremont, California-based designer and manufacturer of a cold brew coffee maker, uses harmonics and recirculation to cold-extract flavor and aroma compounds, yielding a cup with espresso-like crema, with higher extraction yield in less time than traditional cold brew, according to the company's website.
Osma brews up to 12 ounces of ice cold coffee to 20%-plus extraction yield in under two minutes. The fundamental mechanism of action is microcavitation: thousands of microbubbles forming from the release of Co2 trapped in the ground coffee beans, then collapsing within the portafilter, dumping the energy required to extract a range of flavor and aroma compounds.
Each Osma unit is assembled by hand. Chromatic, Osma's coffee partner, roasts out of San Jose.
This product is intended for both consumers as well as professionals, a company representative told Vending Times. Companies can pre-order the Osma Pro through the Osma website.
