Brooki Bakehouse rolls out cookie vending machine at Australian airport

Brooki Bakehouse has launched its first cookie vending machine at the Brisbane Airport International Terminal in Australia, according to a Passenger Terminal Today report. The installation marks another milestone for the bakery, whose oversized; chunky cookies have drawn widespread attention online and helped fuel strong demand beyond its original Brisbane storefront.

Founded by baker and online creator Brooke Bellamy, Brooki Bakehouse has grown rapidly from a single local shop into a recognized Brisbane food brand popular with both locals and visitors. The vending machine, located in the international departures hall, offers travelers round-the-clock access to the bakery's signature cookies, which are baked off-site, sealed for freshness and packaged to withstand long-haul travel.

The machine features a curated mix of Brooki Bakehouse's most popular flavors, such as Biscoff, milk chocolate chip, Nutella, red velvet, NYC-style chocolate chip walnut, and salted caramel, along with rotating limited-edition options. Bellamy said the move was inspired by customer behavior at the flagship store, where shoppers frequently buy\ boxes of cookies to take home or give as gifts.

Brisbane Airport executives said the vending machine reflects growing passenger interest in local food experiences, particularly in its high-traffic international terminals.

The installation follows Brooki Bakehouse's earlier expansion into the airport's Domestic Terminal in September 2024 and aligns with the airport's broader plan to refresh and expand its international food and beverage lineup, with more than a dozen new or upgraded outlets scheduled to open by 2027.
