Melbourne, Australia, sandwich shop Nico's Deli is introducing a self-serve "automat" concept called Night Shift, offering hot, handmade sandwiches through a grab-and-go installation, according to a SmartCompany report.

Beginning March 12, the Fitzroy restaurant will serve sandwiches from 7 p.m. to 11 p.m. on Thursday through Saturday. Inspired by the early 20th-century automat model popular in Europe and New York, the concept allows customers to purchase ready-made food without traditional counter service.

The six-month experiment, launched in partnership with Heinz, will feature a rotating menu of gourmet sandwiches such as panko-crumbed mozzarella sandwiches and classic patty melts. The initiative comes as many hospitality businesses in Australia face rising costs and cautious consumer spending, prompting operators to explore new ways to attract late-night customers and sustain business.

Nico's Deli co-owner Leo Thompson said the automat aims to provide a convenient late-night food option for people heading home from bars, finishing late shifts or looking for quick food between events. While automat systems historically reduced staffing needs, Thompson emphasized the sandwiches will still be freshly prepared by staff behind the scenes. If the concept proves successful, the restaurant may continue late-night service and potentially collaborate with guest chefs to create special menus for the automat.
